I haven't been the best advocate for cold soups in the past but, given the endless string of hot summer days we've been having, this soup was ahh-mazing.
Zio Greg's Cold Cucumber Soup
"Well, we had a bunch of cukes so I peeled, seeded and chopped three of them; added about a cup and a half of plain yogurt; a tbsp of dijon mustard; a few fresh basil leaves, chopped; salt and pepper to taste. I put all of these ingredients in a blender, then left it in the fridge overnight and presto! Cold cucumber soup.
Didn't have mint in the kitchen, so I used basil instead."
